I don’t know about you, but as a mother with two delightful kids and a husband – meal times can be tricky as I have to meet the needs of all their tastes and more. However, my no fuss risotto is one of our family favourites because the boys, hubby and I love it!
This No Fuss Risotto is on high rotation at our house because it’s easy to prepare literally no fuss and freezer friendly. It’s a great meal to have on stand by in the freezer for a busy night and I wanted to share this with you for your family.
How to Make My No Fuss Risotto
Get ready for all levels of awesomeness with this no fuss risotto.
No Fuss Risotto
- 1 cup aborio rice risotto rice
- 4 tbsp butter
- 100g diced bacon
- 1 garlic clove crushed
- 1 small diced red capsicum I often leave this out because #fussykids.
- 400g diced chicken thigh or breast is best but even BBQ chicken will do
- 1/2 cup chopped shallots or brown onion if that's all you've got
- 1 400g can creamed-style corn
- 2 cups liquid stock chicken or vegetable
- 1/2 cup grated parmesan cheese
- salt and pepper to taste
Preheat oven to 200C
Add the aborio rice, butter, diced bacon, crushed garlic, capsicum, diced chicken, stock and shallots to a large oven proof dish.
Stir to combine.
Cover and cook in the oven for 40 minutes.
Remove from oven and stir through the creamed corn.
Cover and return to the oven to cook for a further 20 minutes or until the rice is tender.
Before serving stir through the parmesan cheese and season with salt and pepper.
When defrosting from the freezer a dash of water will help with consistency.
