Ever have one of those nights where there’s nothing left in the fridge. Not quite ready for another shop and have the end bits of this and a bit of that. I found myself in this situation last night! If you follow me on Instagram and Facebook, you might have seen my cleaned out fridge!
Something I always like to do before I do our big fortnightly grocery shop is a fridge clean out. Not only do we need the room for our next lot of groceries but more importantly, I hate wasting food.
Yesterday’s clean out produced some leftover BBQ chicken, some fresh pineapple, a capsicum and some ham. An odd combination, and to be honest I thought the capsicum and pineapple had seen better days.
I was multitasking during the clean out making lunches (on more slim pickings), doing a stock take and meal planning the next fortnight’s shopping list.
Cue lightbulb moment! Pizzas!
I always have a good supply of basics in the pantry and with the help of my trusty Thermomix I had pizza bases in 6 minutes!
While the bases were proofing, I chopped up the toppings ready to use.
I made 4 individual sized pizzas, Hubby has lunch for the next 2 days and there are 2 to add to our freezer supply. No food wasted and Hubby thinks I’m wife of the year = winning!

Topped with tomato paste (from the freezer)
Dried basil
Dried oregano
Left over BBQ chicken
A few slices of ham
A few slices of fresh pineapple
Half a red capsicum
Grated cheese
