There are very few recipes I know off by heart but this raspberry coconut and white chocolate cake is one of them because it is the easiest cake recipe ever. Not only is it an easy recipe to remember but it’s delicious! Everytime I serve it people ask for the recipe. It’s so easy I’m almost embarrassed to give it to them.

The Easiest Cake Recipe Ever
A delicious combination of raspberry, coconut and white chocolate.
- 1 Cup Self raising flour
- 1 Cup White sugar I've used less with no complaints
- 1 Cup Desiccated coconut
- 1 Cup Milk light or full cream what ever you have.
- 1 Cup Rasberries I usually use frozen
- 1/2 Cup white chocolate chips
Preheat oven to 180
Line the base of a spring loaded cake pan with baking paper. Grease the sides of the pan and dust with flour.
Add the self raising flour, white sugar, desiccated coconut and milk in a mixing bowl and mix until well combined.
Gently stir through the rasberries
Pour the cake mix into the pan and sprinkle the white chocolate chips over the top.
Bake for 45-50 minutes depending on oven. You can test that the cake is cooked through by inserting a knife into the cake. When the knife comes out clean the cake is cooked through.
This is one of my go to recipes to make for work morning teas or when people are dropping over. I usually always have the ingredients on hand and it takes no time to whip it up, on more than one occasion it’s even doubled as a dessert.
