These cookies tick a few boxes for me – they are easy to make, freeze well and the kids love them because they are absolutely delicious.
Although, I’m never making them again!
The only reason being – I can not stop eating them!

Delicious Oat Cookies
This is a warning for everyone who's willpower is as strong as mine - one won't be enough.
Ingredients
Wet Ingredients
- 180 g butter
- 200 g brown sugar
- 100 g raw sugar (I have used less sugar and they are still amazing)
- 60 g milk
- 1 tsp Vanilla
Dry Ingredients
- 250 g plain flour
- 1 tsp cinnamon
- 1/2 tsp baking soda/bi carb soda
- 1/4 tsp salt
- 200 g rolled oats
- 125 g sultanas (apricots or cranberries work well also)
Instructions
-
Mix all wet ingredients until well combined.
-
Stir in the flour, cinnamon, baking soda and salt.
-
Add the oats and sultanas until mixed through.
-
Use a table spoon to drop mixture onto baking tray, leaving room for cookies to expand.
-
Bake in a moderate oven for approx 15 minutes or until golden.
-
I’ve tried to reduce the temptation and freeze half the batch for another day but I can hear them calling me from the freezer, and the cookie jar is almost empty.
What have you made recently that you couldn’t stop eating? If you make these let me know if you find them as irresistible as I do.
Happy baking
