This fudge is always on my Christmas baking list I’ve already made two batches this Christmas season, and I dare say there will be at least another 2 to go.

Cherry Ripe Fudge

  • 1/2 cup shredded coconut
  • 1/2 cup desiccated coconut
  • 375 g Dark chocolate melts
  • 395 g can of condensed milk
  • 200 g red glace cherries roughly chopped


  1. Line a 20cm cake pan with bakers paper, ensuring it comes up higher than the sides of the pan roughly 2cm.

  2. Using a frying pan lightly toast the coconut over medium heat for approximately 3 minutes.

  3. In a heatproof bowl combine the dark chocolate melts and the condensed milk.

  4. Sit the bowl over a saucepan of simmering water and stir the mixture until it is smooth.

  5. Add the coconut and Cherries to the mix and remove from heat.

  6. Pour the mixture into the prepared pan and spread evenly over the base.

  7. Refrigerate until firm.

    Lift fudge from the pan and cut into squares.
