These cookies tick a few boxes for me – they are easy to make, freeze well and the kids love them because they are absolutely delicious.
Although, I’m never making them again!
The only reason being – I can not stop eating them!
This is a warning for everyone who’s willpower is as strong as mine – one won’t be enough.
Delicious Oat Cookies
What you need
200g brown sugar
100g raw sugar (I have used less sugar and they are still amazing)
1 tsp vanilla
250g plain flour
1 tsp cinnamon
1/2 tsp baking soda/bi carb soda
1/4 tsp salt
200g rolled oats
125g sultanas (apricots or cranberries work well also)
What to do
Mix all wet ingredients until well combined.
Stir in the flour, cinnamon, baking soda and salt.
Add the oats and sultanas until mixed through.
Use a table spoon to drop mixture onto baking tray, leaving room for cookies to expand.
Bake in a moderate oven for approx 15 minutes or until golden.
I’ve tried to reduce the temptation and freeze half the batch for another day but I can hear them calling me from the freezer, and the cookie jar is almost empty.
